Sau đó, nêm 1/2 muỗng cà phê hạt nêm chay, 1 muỗng cà phê đường và 1 muỗng cà phê dầu ớt vào đảo đều. Nếm xem nấm đùi gà xào cay đã vừa ăn chưa và nêm thêm nếu cần. Đảo đều tay đến khi nấm đùi gà chín mềm thì tắt bếp.
