Lòng gà xào bông cải là món ăn làm cực kì nhanh, mà ăn thì rất ngon miệng, nhìn cũng đẹp mắt, ăn với cơm rất là ngon, dùng món này để chiêu đãi bạn bè khi tới chơi thì còn gì bằng.
Lòng gà mua về làm sạch, bóp phần lòng với muối trắng, sau đó rửa sạch nhiều lần bằng nước. Thái nhỏ lòng gà, cho nước mắm, hạt tiêu vào ướp. Thời gian ướp 15 phút để lòng gà ngấm đều gia vị. Bông cải cắt từng miếng vừa ăn.
Hành tím, tỏi lột vỏ rửa sạch bằm nhỏ, cà rốt gọt vỏ rửa sạch cắt lát nhỏ. Cho cà rốt vào nước sôi tầm 2 phút rồi cho tiếp bông cải, khi thấy bông cải, cà rốt gần chín thì vớt ra để ráo.
Để chảo lên bếp, cho dầu ăn vào, đợi khi dầu nóng bỏ hành, tỏi bằm nhỏ vào phi thơm. Cho lòng gà đã ướp vào, đảo nhanh tay trên lửa lớn. Khi thấy lòng gà gần chín và săn lại, chúng ta cho tiếp bông cải vào xào cùng. Nêm hạt nêm, muối, đường, bột ngọt cho vừa ăn, xào nhanh tay thấy lòng gà chín thì tắt bếp.
Múc lòng gà bông cải ra dĩa, cho ít hành lá lên trên, rắc chút tiêu cho món ăn có mùi thơm hấp dẫn hơn.
